Chicken Verde and Rice and Beans (Serves 4)
4 Large Sheets of Aluminum Foil
4 Defrosted Chicken Breasts
16oz Can of Herdaz or other Chile Verde Sauce
1/2 Tsp Cumin
1 Tsp Garlic Powder
I Tsp Onion Powder
1/2 Cup Diced Onions
2 Cups of Instant Rice
2 Cups of Chicken Brothh
1 Can of Black Beans
1 Cup of Grated Pepper Jack Cheese
Some of the prep can be done at home before your trip.
Mix half the Chile Verde sauce with Cumin, Garlic Powder and Onion Powder. Marinade the chicken in this mix for a minimum of 4 hours.
Prep at Campsite if Chicken is pre-marinated: Soak Instant Rice in Chicken broth for 5 to 10 minutes. Fold foil so that it is a bowl with enough of the edges left to seal tightly. Layer beans, then rice, then chicken breast, chopped onion and cheese. Seal Foil and place on grate over fire or on the edge of the coals. Turn the packet after 10 minutes. Chicken will be done in another 5 to 10 minutes depending on the heat of the fire/coals.
Serve with the remaining chile verdesauce. Optionally also top with avocado, sour cream or cilantro.
